• Because of the high taste intensity, the butterfat content can be maintained at 5% and still provide a thick, creamy feel in the mouth. This lower butterfat level yields equipment and materials cost advantages to the retailer.
• Volume overruns are typically 50% with higher overruns possible using pump-assisted freezers.
• Kovener's Korner soft serve ice cream mixes are supplied in 2 -1/2 gallon pouches with 2 pouches per handling crate.
